300gr Caster Sugar

TRADITIONAL FRENCH RECIPE: Meringue are not just easy, but also pretty fun to whip up, because if you have some coouring you could be able to make all colours and effects you can think of. And you only need two ingredients to make them. Unless you want to color them and then it’s only three. Also... if you use sprinkles... that might count as a fourth ingredient. If you use lemon, that would become a fifth ingredient. If you then use... ok... you go it.
Some people use superfine sugar, but in this case, for the classic French Meringue, let's start using simple reflar sugar and egg whites.
Meringue are sometimes called 'forgotten cookies' because you make them, put in the warm oven and forget them. Seriously. I nearly burned my house to the ground once.

01 - Combine Sugar and Egg Whites in a large mixing bowl over simmering water.
02 - Make sure the bowl doesn't get too hot, you might risk cooking the Whites. Keep stiring until the all Sugar has dissolved.
03 - Whisk the Meringue mix for about 20 minutes.
04 - Set oven to 100C / 210F.
05 - Pipe and bake for 1 hour for a soft core or 1.5 to 2 hours for dry kisses.
- Add a bit of food colouring to make it special.
